Are you looking for a tasty and easy to prepare black bean side dish that goes great with chicken, steak, or tacos? This versatile black beans dish can serve as a side item, a tortilla or quesadilla filling, a chip dip, or even as a condiment. The best part is that it uses just FOUR ingredients! Well, five if you include the optional shredded cheese. You will also need a slow cooker.
Spicy Black Beans and Corn Ingredients
1 – 26.5 oz can Black Beans
1 – 10 oz. can Rotel Tomatoes and chilies
1 – 15.25 oz. can Sweet Corn
½ to 1 tablespoons taco seasoning (depending on how spicy you like)
1 – 8 oz. package of shredded Mexican, cheddar, or Colby jack cheese (optional)
Preparation
Prep time: 5 minutes
Cook time: 2–3 hours
- Drain most of the liquid from beans. Empty the remaining sauce and beans in slow cooker.
- Completely drain Rotel and Corn and empty the contents of the cans into slow cooker.
- Add taco seasoning to slow cooker. Stir to mix ingredients together.
- Turn slow cooker on low for 2–3 hours or high for about 1½ hours. Stirring occasionally.
Serving
Spoon onto plate as a side to chicken, steak, tacos, burritos, or quesadillas. Optionally add cheese topping.
We also enjoy using this as filling inside a tortilla with lettuce, tomato, and cheese as a black bean soft taco, or with a tortilla and cheese and prepared as a black bean quesadilla.
You can also serve this with tortilla chips as a black bean salsa, or, one of my favorites, as a tasty alternative topping on a hamburger or cheeseburger.
